Messermeister Meridian Elite - 2.1/2" Garnishing Knife - E/3680-2.1/2
The blade of the Garnishing Knife has an inverted curve that gives it a more common name of “bird’s beak” parer. The small 2.1/2" knife is used to turn rounded surfaces of vegetables such as potatoes, beets, carrots, and zucchini into barrel shapes.

These knives have the sharpest edges of all forged cutlery. An elaborate 3 step sharpening process is enhanced in it's final step by being carefully hand-polished.
The Meridian Elite is hardened to 56 Rockwell hardness C, making them hard enough to hold their edge for a long period of time, yet it is easy to restore their edge with a steel.
